The staff, the food, the atmosphere, the location! A wonderful restaurant. We had Cordero lechal-milk fed lamb, baked skin-crip and absolutely tender and delicious. The owner takes the orders for food and wine and delivers on a cart to your table, and while on the cart, cutting the 1/2 of a lamb with the edge of a plate; from start to finish in a cordial but no-frills fashion. He asked us if we are big eaters (we said no, but big drinkers of the local wines: Bierza-Leon. He said no, you prefer a Rioja with this, provided us with a great bottle at 18e). After a great meal, service including an efficient and cordial server, and a complimentary digestivo, he showed us the ovens and explained the process: slow-cooked, rotating in a closed oven, with just salt and the natural juices of the meat. The specialties were lamb and pork lechal. A wonderful experience in every way.
