As I don't like truffle, I asked that it be removed from celery to braise with gorgonzola cream. Result : an entry to 38€ rather bof because very frankly the celery did not taste a braise. I told the waiter who told me that he's cooking in a crust... blablabla... that doesn't stop him from having a taste. The county cream egg was, however, rather good.
