Carbone - Reserva de mesa

This Carbone location is located in the Aria Resort and Casino where we were staying. We did not have a reservation but walked in and got two seats at the bar. It was around 9 PM at night. The place was still busy and high energy and crowded at the bar. The bartender was busy but fairly attentive. He gave us some recs as it was our first time at Carbone. We were not super hungry but wanted some drinks and a sampling of food. We got some complimentary focaccia bread which was soft and delicious. This is a fancy Italian steakhouse tucked in the Aria that will require a reservation if you don’t plan to wait. The service and food are exceptional, but based on the price you’re paying, it better be! Their Tomahawk even has their name seared into the bone, which was a nice touch. Drinks were well made and overall food was delicious. The steak was well made, and the pasta was cooked perfectly. Can’t complain about the food or drinks at all! Only complaint I had from my visit was the washrooms had flooded earlier and weren’t fixed. It was quite a trek to get to the nearest public washroom close to the restaurant.

Carbone is a dining experience. You'll want to make sure you have reservations and ensure you have about 2 hours available for dining. The staff is incredibly friendly and attentive. The food is all very good but that beef carpaccio is life changing. The balance of that dish is pure perfection. I cannot stress enough that it alone is worth the price of admission and I'd order it again in a heart beat. The spicy rigatoni and veal Marsala were both great.

My friend and I managed to grab a couple of seats at the bar later in the evening. Bernie was awesome taking care of us. The food baked clams, bread, veal Parm and spicy rigatoni were absolutely the best. No rush to finish as the restaurant closed either. The staff really took care of us. A plus experience! Food was decent. The table side Cesar salad is a must. The carpaccio is an absolute must. Skip the calamari. Veal parm was okay and the Dover was also okay. Table side deboning was excellent. Troy is by far the best server here. He deserves the biggest raise.

Loved the atmosphere and the music was fabulous. The wait staff was excellent. The pasta I ordered was not good. My friend ordered the same pasta and agreed that it wasn’t good. That was the only disappointment.

So great! Ceasar salad was wow, made tableside. Service was outstanding. Spicy pasta rigatoni was just as good as everyone said it was.

Worth the hype. Felt so elegant and welcomed. It was a great birthday dinner. I enjoyed everything I had. Definitely want to return Reserva una mesa ahora

Tartar was delicious. Cocktails were alright. Definitely worth checking out.
