When it comes to the Italian cuisine, or probably any cuisine for that matter, what constitutes a “classic cuisine” for you? Old familiar dishes, which stay unchanged for many many years (if it works, don’t touch it)? And then another question is what is the “modern cuisine”? You change the recipe all the time, just to make sure you use ingredients which are “in vogue” (like pork belly or Brussels sprouts today)? Or do you take the familiar dish and put a spin on it?
