There's no doubt that, on such an evening, this terrace of a fine old building is a truly lovely location. The food is certainly good, but not outstanding, but the service was delightful. A little formal and traditional, but attentive and helpful with enquiries about the dishes. BUT (and it's a big BUT) we were just unlucky; sitiing there enjoying the peace, just the two of us, and a party of about a dozen people arrived, with four or five children who proceeded to colonise the whole area, turning it into a playground. The restaurant offers a good menu at a decent price, offering three different dishes per course. The individual dishes are also available 'à la carte '. The food is prepared using seasonal and regional ingredients. There are no meatless dishes on the menu (except dessert of course), but staff was kind enough to adapt the menu for my vegetarian partner, and it did not disappoint. The desserts were particularly enjoyable. Staff is professional, almost formal, and knowledgeable about what is being served. The safety measures implemented for Covid-19 are good. The atmosphere and service are unparalleled this is a fairly bold yet accurate way of putting it. The food is always excellent, often complex but there are always simple dishes to fall back on if you are not in the mood for nouveau cuisine. Regulars on the menu such as pigeon you can seldom go wrong with. However, not to knock the restaurant at all, but the real reason anyone should visit this restaurant is to eventually visit the hotel itself. The staff poolside, in the restaurant and on the concierge are impeccably dressed and very personable. I have been going to this hotel and restaurant for over 25 years and can honestly say that the standards have never slipped.

Medieval tower under reconstruction with comfortable rooms and everything renovated. Nice surroundings and gardens. On the outskirts of Carcassonne you need a vehicle. Very good breakfast. It has a dinner service with tasting menus with wine pairings that we did not try. As it is a medieval tower, there is no elevator; you go up a spiral staircase.

Very nice experience. The owner, master cheesemaker, gastronome and oenologist, introduced us to authentic and gourmet cuisine at a very affordable price. We feel a real infectious passion for this profession. I really like Corsican wines ;

It is difficult ,it seems, to find a fine dining in the Carcassonne area on a Monday evening. After a lot of searching we found This restaurant and were delighted. The food was excellent and very efficiently served by two lovely ladies.

Perfect place to disconnect and visit Carcassonne. Excellent attention from the owner and perfect dinner with wine tasting. The owner is very friendly and attentive and has a great knowledge of the region's wines and an excellent cook.

Fabulous Michelin standard food, but at considerably less cost. Superb food, lovely wine and excellent, efficient and friendly service in a lovely setting. Definitely worth a visit ! Highly recommended!
