You will no doubt be familiar with that rare dining experience when ambience, quality of ingredients, creativity of preparation, variety of options, and exquisite service converge to create a memorable dining experience. Such was our experience at Delademanda in Burgos. Delademanda, in addition to being an upscale boutique market, is a discreet fine-dining restaurant. We dined downstairs in an intimate setting, surrounded by a visual effusion of wines, meats, cheeses, and spices. All conducive to enthusiastic eating. We combined a couple of bottles of excellent Toro Victorino with Iberico jamon, anchovies in olive oil, artichokes with egg and more ham, then pulpo, rounded off by an ethereal cheese cake dessert. All of which was exceptional. But the highlight of the evening was Armando, the sommelier and apparently the maitre d'. With his magnificent moustache and rolling belly laugh, he imparted an infectious joie de vivre to the occasion. He clearly loves his work and equally clearly knows his product. Such was the pleasure of the occasion that we remained long after the remainder of the restaurant had rolled up the carpets, so to speak. We love Burgos, but Armando and Delademanda would be sufficient excuse to return, regardless. Go there.
