A meal with friends who knew and had vanished the “real Italian”. We opt for the carbo whose recipe seems to conform to the original and unfortunately huge disappointment: very fade, no flavor. Guanciale is not cooked enough (the fat is still white instead of the beginning of transparency), and Pecorino has no taste. I expected and promised my friends an explosion of flavors and we all added pepper and salt while in theory between the guancial and pecorino it is too much limit. It's a shame that the ingredients aren't at the RDV. For the rest, very nice. A varied map, far from being very Italian but where everyone will surely find his happiness.
