Fasanerie - Hotel Waldschlosschen

We had our dinner in the restaurant twice while staying at the hotel. At the first evening, the staff were quite busy as the restaurant was nearly full. So we had to wait to be seated, then wait for the meny and so on. Also, the water we ordered was forgotten, and bread and butter did not turn up until after the first dish was served. But the food, pumpkin soup followed by galloway steak, was excellent and indeed well worth waiting for. We also appreciated the wine list offering a good selection of wines by glass (0.2 l). The next evening, the restaurant was less crowded and the level of service higher. The crab soup was great, but the rehbock steak was disappointing. We found it hard and tasteless, a surprising drop in quality from the day before. In summary, a variable experience both in service and food quality.

We chose the location on the occasion of a birthday dinner. Upon making the table reservation the caller was asked if this was a special event as well as what kind. So the reply was, yes, it is a special birthday. So this was a great start with expectations. The meal was tasty and well proportioned, I enjoyed the amazing Schleswiger Fishplatter with a selection of fish from the region. Service was swift and professional but stale. No attention was given to the birthday which took us by surprise as expectations were not met. The restaurant has some historic pieces showcasing the connection to Olearus. Service staff is unaware of the history of Olearus. The restaurant management would benefit from such small details - it would make a difference.

A dash of lime on the carpaggio, fresh local ingredients, very tender kalbsschnitzel with a 'royal' addition of fried egg and salmon, good professional service, solid choice of wines... This place could have it all if it weren't for one crucial element absent: atmosphere... There's just not a lot of atmosphere here... could be the guests, could be the over-prevalent hotel-feel to the restaurant, could be the staff too much focussed on being professional... could be me and my personal taste.

First class food -- fresh fish, pork,etc. Fine wines of the region. Each meal is well accented by correct vegetables, etc. This is all first rate dining. My only concern was that the service is uneven. They appear busy, yet little happens. Hence it is rated four star.

Very fancy food, with very fresh and high quality ingredients. Great wine list, great meat and greens... everything was outstanding.
