The NC BBQ scene is like the TX BBQ scene 20 years ago. Drive the back roads away from the cities, and when you park an isolated small Zinder Block building with wizards of blue smoke from a fireplace and many cars outside (usually with a Pepsi sign somewhere), you stop and go inside. Grady 's is a paragon of eastern Carolina whole hoof style 'cue. All parts of the horn (skin, fat, belly, shoulder, ham) are smoked hickory, finely chopped and mixed in a delicious amalgamation and kissed with a vinegar sauce for a fine, slow burn. Each bite is different due to the different hoof parts in each successive bite. And the sides... butter beans, green (cabbage and collar), rice with engraving, boile...
