We visited Hindsight BBQ on a Saturday night for a family member's send-off. Before placing our order, we had a few questions to better understand the menu. We decided on brisket with mashed potatoes and gravy, pork belly with ribs, mac and cheese, baked beans, and coleslaw, along with an order of smoked sausage, spinach and cheese, a few sodas, and brisket empanadas.
We placed our order at the counter and sat in the back to wait for our food. Unfortunately, everything arrived on one platter, which was inconvenient. Absolutely outstanding from start to finish! As soon as we walked through the door, the entire staff was fantastic. This really means a lot to me and reflects that they enjoy their work and are well looked after. The staff was friendly, smiling, and incredibly helpful — an A+ all around!
Now, onto the most important aspect: the food. We eat a lot of BBQ and always make it a point to seek out local spots wherever we travel. We all agreed that everything we tried was incredible. From the wings and ribs to the brisket, pulled pork, mac and cheese, steak burrito, and all the sides—everything was delicious. The location is amazing, featuring plenty of lovely shaded outdoor seating, along with the option to dine indoors. The staff were all very friendly. However, the major downside is the cost; the prices are exorbitant. The meals don’t come with sides, so for three entrees, three sides, and three beers plus gratuity, my bill totaled around $120. Our burnt ends were served in a single tray, which would have been fine if everyone had their own, but it turned out to be quite inconvenient. I was also overcharged for drinks; two $10 beers and a $10 frozen drink ended up costing over $40. Amazing place for BBQ. Easily the best BBQ you can get in Waterbury. After one look and taste you can tell just how much effort the cooks put into their food. Hats off to the kitchen here. The service is always welcoming and the atmosphere is great either inside or outside. The Alabama Wings are a solid go to choice.The only downside is the tight seating inside if you have a party larger than 4 people. Luckily the outside seating is a nice comfortable place to have lunch or dinner as an alternative.Parking: Dirt/Gravel lot right next to restaurant. No parking lines but plenty of space.

I visited Hindsight BBQ for lunch with two friends. It's a cozy little restaurant with outdoor seating. The brisket was fantastic—great bark, a nice smoke ring, and juicy. However, I found the pulled pork to be just okay; it lacked a bit of flavor, in my opinion. On the other hand, the beans were outstanding—so delicious! We were already halfway through our meal by the time the brisket tacos arrived, so the service was quite slow. Despite that, I would definitely return because I really enjoyed the brisket and would love to try it as a sandwich next time.
The food was fantastic and brought back memories of the barbecue I enjoyed in the South. While BBQ tends to be on the pricier side, the prices here are quite reasonable. There's a cozy little outdoor bar with plenty of picnic tables, although you still need to place your order inside. They also have an excellent selection of beers. My favorite side dish was the potato salad.
We ordered a smoked turkey for Thanksgiving. Amazing. Flavor was incredible (as I would expect from them), picked it up this morning (along with a pint of their gravy and an apple pie), kept it warm in my oven for about an hour before guests showed up. Stayed moist, tasted great. Will def be ordering again next year!
WOW!!! The BEST BBQ I've had in years. Me and my lovely wife went for the first time and were not disappointed. Great people, great food. And best of all, close to the house. We will definitely become regulars.Parking: Ample parking.Kid-friendliness: Plenty of options for the kids.

The smoked chicken quesadilla was outstanding, and the burnt ends cauliflower was absolutely fantastic. However, the brisket and ribs were a little on the dry side.
Excellent BBQ Pulled Chicken sandwich, great staff. Smaller indoor dining area, but they do take out too. Also have a good amount of picnic tables outdoors.
