I haven’t had tripes cook like that for decades. The real French way to cook tripes. Worth a detours I you fancy local Avayron dishes included bavette, sausages , terrines... all home made

if you're on your way to either Rodez or Albi, you might want to stop by to get the real deep France touch. You'll meet lots of locals and food is quite good and there's a lot to eat.
