Jean Martin gracefully opened his restaurant for us when we asked to make a reservation. When we arrived, JM offered us a drink and started talking about him and the region. Despite our very bad French, we were able to communicate and learn about fish ponds, people who fish there and how they are managed. We discovered the Basque region and the borders with Spain. JM is very passionate and fully lives its life. His dog Boston has his name for a reason. Ask JM and he'll tell you. The food was great.
