On June 1st, my fiancé and I went to dinner and chose Pajarito. We sat on the patio and it was the worst service we have ever had. We sat down for about 10 minutes until we got helped and then ordered 2 drinks and an appetizer... 15 minutes later we still had no appetizer and our server hadn't come back once even though he had been to every other table multiple times..we finally grabbed his attention and asked if our appetizer was coming and he said I didn't know you ordered one.... no apology nothing. Queso was not good, the food is over priced.. we planned to have dinner there but it was so bad that we decided to leave after we got the appetizer, which by that point we didn't even care for...
I took myself out to lunch at Pajarito and enjoyed every bite. The shrimp tacos were light, refreshing and still plenty filling. The shrimp were crispy fried, and the cabbage provided even more crunch. The mango pico de gallo corn relish made the dish, in my opinion, and the chipotle aioli gave the perfect kick of heat. I wasn’t a huge fan of the tortillas…they got soggy rather quickly, despite the fact that there wasn’t much liquid on the tacos themselves. I couldn’t resist chips a salsa flight. Great environment and excellent service even on Cinco de Mayo! Previously went to St Paul location and wanted to compare to this location.The shrimp tacos were very crispy and tasted fresh. Mango and peppers were nice compliment. Aioli was creamy and spicy.The grilled octopus and squash tacos are still my favorite menu items! The octopus was a bit more saucy than I remember but grilled perfectly, and didn’t have the chewy ‘skin’. Beans were cooked well, cooked through yet had a little bite.Squash tacos have it all, in my opinion— crunchy, creamy, tangy. Delicious!The ribs were also delicious and well seasoned. It started well enough. The drinks are excellent, and then chips and guac were amazing. That’s where the good experience ends. My server dropped my chips and guacamole off at my table and that was the last I saw her for 42 minutes. When she FINALLY came over, I pointed this out to her and she responded with other a dismissive tone that basically said “So? What’s your problem?I gave a second star only because the food and drinks are good. If you go, I would recommend asking for a server other than a lady named Mickey.
The shrimp tacos were some of the best I've ever tasted. On the other hand, the wine list could use some enhancement. I know Mexico isn't Napa Valley, but there are certainly some great selections to choose from. My dinner companion couldn't stop praising the cocktails, which were exceptional. The restaurant was quite bustling, so I think many would agree with me: it's an outstanding dining choice.
Food was on point! We sat at the bar, had tacos and the octopus dinner, everything delicious. Manager very involved assisting staff and ensuring customers were well taken care of. Employees generally had an upbeat service forward attitude, which set this place apart. Drinks were excellent; bar is huge, but ambiance could be more fun. Make sure you try their guacamole! We stopped by for lunch and sat on Pajarito’s front patio.We shared the guacamole and some shrimp tacos and were very satisfied. Everything was very fresh and had tons of flavor. It is on the higher end for price but makes sense as it is in downtown Edina.Server was friendly and attentive. Pajarito is a great place to stop for lunch or dinner.

The ambiance is pleasant, but unfortunately, the food was disappointing during both of my visits. The first time, the service was decent, but during my second visit, the service was genuinely poor. I found the prices to be excessive; you can find much better tacos at smaller restaurants for about a quarter of the cost.
My wife and I ate here last week (Tuesday evening) with our son and his girlfriend and had a great experience. The service was very good (our server was very conversational) and the food was excellent. They also have their own recipes for several drinks. We plan to return.
