TL;DR: Without any question, this would be one of the signature places for a bite in Brisbane particularly to an outsider wanting to know the best eats for value. It is immensely popular and has been for an age and a half. The food is fantastic, healthy, tasty, and portions that will fill anyone up—all of that delivered with diligent and welcoming service. <br/ <br/ Anyone vaguely familiar with this area of town, and particularly aficionados of Vietnamese cuisine will not need any introduction to this place. It was a dark and stormy night... well actually it was a cold and rainy morning with storms forecast to come, and we were in search of something warming for lunch, specifically somewhere with undercover parking. Settled on Pho Hien Vuong Pasteur at Market Square, swayed by the presence of the new multistorey carpark <br/ .<br/ But...took the wrong exit, so got rained on a little bit. On a cold night, what else to have but a big bowl of pho. It was already a busy place but managed to get a table and a high chair.<br/ <br/ This place is all about pho, so people know what they want and we always go pho dat biet, special beef noodle soups it has everything. Also they have 3 sizes, we went medium and large.<br/ <br/ Old school styling just tables and chairs, and large mirrored wall. Nothing fancy just eat and go.<br/ <br/ Our meals came quickly were really hot, like super hot and had to wait maybe a few minutes to cool down to eat. Have it been back over one year so re-visited it last week.Business seemed not as busy as before that may due to the pandemic.We ordered a dish of four style combination rice and a combination noodle soup (medium size only).Portions are as big as before (that is the reason we order the medium size). Never see so many varieties of meats in one bowl of noodle soup and so as the rice. I went to a number of pho restaurants in the south side. IMO, this is the best. The beef broth is light and yet full of flavour. It tastes slight sweet. If you order different types of noodle soup, you get different broth, eg chicken is different to the beef one and the clear noodle is different as well. However, service need improving. Staffs are not rude, but just not friendly. They don’t smile to you. When you pay at the cashier, no thank you was said.

This place is great! We have been coming here for years and almost always get the large number 8 combination beef pho and some spring rolls and this feeds 2 adults and two children for $25. The broth is delicious and adults add chilli oil etc to theirs and kids slurp happily on noodles and pho with a splash of water to cool the soup a bit. The bun/vermicelli salads are delicious as well. Would happily eat here every week!! <br/ <br/

Came around 2:30 pm on a Monday arvo. Quick service and get food very quickly. Got the combination medium size. Plenty of noodles. I’d probably get the Small next time. Good variety of meats. The soup was flavorful, but they probably use MSG for soup base as I was pretty thirsty after the meal.

Always consistent delicious Pho. Broth is full of flavour and complexity. Worth crossing the river for. I always come in with plans to try something different but fall back to my favourite Combination Pho. Reserva una mesa ahora

This is the best pho place I've ever been! Prompt service, super tasty broth, and super nice servers! I had their spicy beef noodles and it was super good. Highly recommended to everyone.

Conveniently located in the middle of Market Square we like their Combination Beef Pho (Dac Biet) and Bun Bo Hue.
