It is funny how no other guests and reviewers have picked up that this a Japanese fusion restaurant. Connoisseurs well versed in Japanese cuisine might be harder to impress than the average guest. I give full points for the innovative menu and the innovative and well executed blend of new flavours and interpretations of Japanese cuisine. Most servings were delicious and/or interesting. The cooking skills and technique at work here are also impressive. The level is high by any international standard. The price level is about right but wine prices are ridiculously high. $78 for three glasses come on! That said, despite such fame and hype and when charging such prices, there were some mistakes:...

I have been twice now and I love this place! Playful food, cool ambiance, and great hospitality. If you go, be sure to check out the bathroom XD As everyone else already has mentioned, the fact you can sit at the bar and watch the chefs prepare everything is entertaining, but what hasn 't been talked about enough is the enjoyment in the details. The silverware and china, the choice of sparkling or still water, and then the towels that grow as well! For the most recent trip in Spring of 2024: The famous foie gras donuts did not disappoint. We arrived early for our reservation so they took us upstairs to The Paterson House for a drink. It was lovely and the drink was delicious. They came and picked us up from the cocktail bar for our reservation. The Catbird Seat is very warm and intimate while not being pretentious. I don’t want to give away too much about the food but it was unbelievably delicious. Each bite was carefully manicured to delight your taste buds. The wine pairings were amazing there was a lemon sake that blew our minds. This is a must visit restaurant and well worth the money for a one of a kind experience. Chef Brian took time to talk to us and get to know us as well.

I have gone to degustation dinners all over the world, most recently Toyo Eatery in Manila, which was amazing. This was the opposite. I felt like I was at a food factory. They churned out the dishes and stuck them in front of us and barely explained what they were from across the counter with a lot of noise competing with what they said. No atmosphere at all. The dishes were mediocre and not as creative as with other restaurants. Definitely not worth it. I did have a better experience at a sister restaurant, Bastion, but still not on par with any other tasting menu experiences.
