Waidwerk (im Romantik Rottner)

In the Michelin 1 star category the bandwidth is quite large: One has just made it there, the other already cooks on another level and only has to wait for higher ordinations. I wish the soon ascension to the Waidwerk I was absolutely delighted at my first visit. The dishes are consistently at a very high level and then there are still rippers up. For example, the arrangement of the amuse gueules was already more sophistication than in some complete menu. Or pork belly with cabbage, Kohlrabi and a Dashi Sud a great combination of spices and aromas. Also the dessert from sesame ice, sesame crunchy and thin plum slices has knocked me around.
