The good: very good pizza base in the traditional napoli style (elastic inside and crunchy outside). The bad: awful quality mozzarella and average tomatosauce. I don't understand: this has the potential of being a really good pizza but the owner decides to save on the...basic ingredients like the tomato sauce and the mozzarella. For the price he sells his pizzas he should use better ingredients. I guess the french customers like his pizzas because even his terrible mozzarella is better than the cheap gruyere most french pizzerias use.
