"As I was crediblely insured, there is no time limit for GG to make an assessment, provided that nothing significant has changed since the visit. In addition, the reader is clearly pointed out when the visit has been back for a long time. The Sushi Kusakabe at Villa Thai in Umkirch has been listed here since 2010, but is still there without review. A terrible gap! One of the few Grand Masters in Germany, Yuichi Kusakabe, follows his high art. And since the latter became 82 and no one knows how long he will be holding the knife, I simply copy my first and last TA report without further comment. There's everything you need to know. If I have violated the regulations of the house, please whip me back. Sushi Master in Thai Restaurant, 3. October 2015 This is not quite normal that a restaurant Villa Thai is surrounded by a garden full of Buddhas, is guarded by a (although uninhabited ghost house is guarded and decorated inside with beautiful Thai carvings, but then one of the very few sushi masters in Germany calls his own. And what one! Yuichi Kusakabe is more sushi grandmaster than sushi master, goes stracks to the 80 and is somehow still not mature for retirement. Thank God... His sushi and sashimi score less with esthetic toys than with solid quality and fresh ingredients, as you get them in this country really rarely. For example, we have eaten our first Amaebi Sashimi (raw freshwater cloves that bear a somewhat delicate name for European ears, but are simply incredibly delicious. There was nothing to complain except that it might be even more interesting if you could watch the master at work while enjoying his creations, but you would have to rebuild the place. And that one pays a lot more there than at the sushi chef around the corner (which usually comes from East Asia from somewhere, but not from Japan, is more than appropriate. We come to Freiburg more often, because of the love of relationship, but now we have one more reason. If we had eaten sushi as usual, 26. February 2018 Since we found out years ago that in Umkirch there are the best sushi of the federal, if not all the country, we are pilgering there more or less regularly. Now we were there again, and some of us, as well as my littleness, decided to finally test the Thai kitchen of the house. Unfortunately, this proved to be a good idea. While the sushi of the now over 80-year-old Grand Master Kusakabe, which I have praised several times, were as fantastic as expected, the Thai dishes ordered could not be fully held. The best was the dish with mixed appetizers that not only looked delicious, but also tasted so. (Maybe at least one of the sauces that had been added could have been a bit sharper to the spring rolls, for example, it would have been good. After that we had grilled duck in two variants, with Shiitake mushrooms and with green asparagus. Both variants were very similar and, unfortunately, also to what is served in the Chinese, and externally as tasteful, which surprised us. The duck slices were delicate on the inside and crispy on the outside, as it belongs, but the Shiitake mushrooms were stubborn and tasted like that. Also the soy-based sauces, which were there, were anything but exciting, with the green-saving variant still had a bit of a touch thanks to the abundant pure pepper. Because of the quality of the meat, both dishes were somewhat more demanding than we know from the Chinese of our trust, but not so much that it was the truly firm prices of 24 or 26 euros would have been almost justified. In future we will be happy to return to Villa Thai, but leave the Thai card unopened. Conclusion: Sushi a must, Thai a can"
