the decor is right there: everything is green and red, the lauburu tournament on the menus, the palas serve as a slate to the desserts card, and the bayonne party posters are hanging on the wall. We feel that even if the servers have seen the day north of dax, the boss, he, has to suck chistera and practice Basque force. and in fact, outside of the beer, the entire map is made up of dishes from the Basque country (although it is missing an axoa). the chipirones at the plancha are tasty, the sardines accompanied by honest piperades. sangria is not very fresh (neither cold, nor recent, given the deposit in the glass - obviously bodega). The real disappointment came from the Basque cake, whose crust was not at all crispy and friable, the cream not generous enough, and that we were served warm as a galette of the kings, and so soft as after a microwave tour... we did not ask that of etchebaster, but we are so disappointed. If you are going to take a tour of this bistro, choose a sheep cheese with cherry jam to close your meal.
