We stopped by after taking a tour of the Dr. Pepper museum. The place had recently opened for the day and was short staffed but the service was still quick. The person that brought the menus to us explained the situation and was a bit condescending when asking for our drink orders but nothing outrageous. When the food arrived we were excited it looked tasty but we quickly found the food to be bland. The brisket had no flavor, it was dripping oil, and not it the juicy meat kind of way. My host/server Tyler D was very friendly, welcoming and attentive. He was great, But, I walked into Coach 's to place a To-Go order. I really just wanted to try another Texas BBQ place before i returned to my home in MD. I found Brisket on the menu...One meat, two sides. So, I ordered brisket, Caesar salad, and cole slaw. It was ready pretty quickly, so off I went. I found aparking spot in the shade and opened the packages. I absolutely love Coach’s, wonderful food, drinks, and staff. I live nearby and have become somewhat of a regular. Anytime I’m there, I’m always served promptly and have never had to wait long for food or drinks. And on that topic if I ever am waiting for food or drinks I’m always politely given a reason by staff (though it’s only happened once and it was about a 5 minute wait. . All in all if you’re looking for a good barbecue place in Downtown Waco with a great environment and friendly atmosphere. I’d recommend Coach’s Smoke every time.

The food was underwhelming. We visited around 2 PM on a Friday, and there was only one other table occupied, which in hindsight might have been a red flag. My pork nachos were loaded with gristle, making them quite unappetizing and challenging to eat without having to be cautious about biting into tough pieces of meat. This was especially disappointing since we ordered during lunchtime at a discounted price. However, I do want to mention that our server was excellent.
As a Jersey girl, I can confidently say this restaurant deserves a solid 5 stars! The jalapeño sausage was outstanding, and the green beans had just the right amount of pepper and spices. The BBQ sauce was a perfectly balanced blend of flavors. Our food and drinks were served promptly. The owner and our waitress were super friendly, attentive, and genuinely knowledgeable. Keep up the great work! Kudos to everyone there!
I used to love coming here, but it's been a few years and the food isn't as good as it was. My husband ordered the 3 meat plate with brisket, sausage and turkey, potato salad and okra. I don't think the turkey was real turkey... it looked like processed deli meat. The potato salad tasted watery and the okra wasn't seasoned.I had the Real Deal potato, which tasted good. Just disappointed with my husband's meal
We stopped in for dinner on a Saturday night. It was busy but we had no wait and were seated right away. We went with the Jr Varsity Sampler to share between us and oh boy did they deliver. We have at least enough for 3-4 more meals. The sides and BBQ were all delicious and our server, Cristal, was awesome! We be visiting again in the future!

If you're a BBQ enthusiast, I recommend looking elsewhere. The ribs were served cold and were incredibly dry. The sliced brisket had the texture of jerky, and the mac and cheese was quite unappetizing. Overall, the prices are far too high for the quality of the food. On a positive note, our waitress was very pleasant.
