I think that’s the third time I’ve eaten at El Establo and I was glad to see it was open again today. We went there to eat meat and enjoyed a delicious steak (chuletón without the bone) of Vaca gallega (Galician cow) of an already very respectable age before being “hung” for another seven weeks. Full of flavour, with some nice fat and quite tender. There are a good number of places in the area where you can now enjoy excellent meat. But some of the best (Vascook in Conil and La Castilleria, ten miles or so away near Vejer, make little or no effort to cater for vegetarians. El Establo does make the effort. I can’t say I’ve sampled any of their vegetarian offerings but, today we shared a very nice first course of scrambled eggs with shitaki mushrooms and prawns. It can’t be difficult to do it without prawns and anyway, there are other dishes which don’t have to be adjusted. I heartily recommend this restaurant, in the centre of Conil.
