In early August, my aunt, uncle, husband and I decided to travel the Canal Du Midi by boat. On the 5th day of our trip down the canal, we moored in Carcassonne. We planned to spend two days exploring the famous city. My aunt and I happened to find Le Bis-troquet while looking for Les Helles and waiting for our husbands. By late afternoon, we were all famished and looking forward to wine and lunch. This place did not disappoint! My aunt and I enjoyed our yummy tartines (open-faced sandwiches), while the men devoured their hearty sausage special of the day. We were not rushed even though lunch service was over. We leisurely enjoyed our wine, meal, and coffee before making our way to the castle...
Happened upon Le Bis Troquet when looking for something handy for lunch after the market. Very friendly waiter who ran through the menu for us and then took our drink order. Our very friendly waiter was rushed off his feet, so it took a while for him to then take our food order. However the wait for the food then was a bit ridiculous. Yes everything is hand made to order which is brilliant, but it took us 2 hours to have a lunch of 6 tartines. The waiter was literally running between the counter and the tables outside, and at one stage he ran off and ran back in with bread from the bakery. It did not trouble us as we were on holidays and it was fun people watching, however you would not want...
If you are in the new city of Carcassone and need to have a dinner or lunch you can definitely choose this one. The staff was super nice and friendly, we had a great time. The food was all seasonal, fresh and delicious! Tartine plates are good choice but I would also ask the 'plat du jour' as we were lucky and I had a great stuffed courgette! A nice local French experience :)
First, I have to say the staff are very nice. But the food ranges from bland to terrible. They make open sandwiches. They are not very good. They take a long time to make, and I don't understand why. They served us a cold cucumber soup, which was perhaps the worst thing I've ever eaten. It tasted like the bad love child of sewerage and dish washing liquid.

Had lunch with the family at the Le-Bis-Troquet and we were very happy with our selection: fast and friendly service, and delicious food made from local ingredients.Both tartines (we had three different, all very good) and menu of the day were tasty and fresh.We will return without a doubt for lunch if are in the area.
Nice place in central Carcassonne just off place Canot. Menu limited to tartines and although an extensive selection available that's all. I opted for a pepperoni which tasted very good and consisted of local ham, grilled red pepper compote with rocket and fresh pesto.
The waitress was the best part of this dinner! Thanks so much. For only 12€ you get soup/salad and a ginormous bruschetta to choose from many types! They only use ingredients and drinks from around the place :) recommended!
We ate a delicious meal here and we're served by very friendly staff. The open sandwiches were delicious, as was the gazpacho. It's nice to eat something a bit different and we will definitely be returning

Superb food lovingly created. To call them ONLY open sandwiches is a gross injustice. As well as the excellent food the atmosphere and staff are wonderful.
