Dinner at Nimblefish was absolutely incredible. The chef crafts an Omakase menu consisting of 11 courses featuring the finest, freshest ingredients, followed by soup and dessert. After the chef's guided tour, you have the opportunity to revisit favorites or explore new flavors—definitely take advantage of that! Every dish is prepared with care, pride, and precision. I returned to this restaurant once again, and the fish was incredibly fresh and delicious. The aged fish, particularly the one soaked in sake, was a standout. Everything about the meal was fantastic. However, I did notice that the sushi slices have become noticeably thinner and smaller than before—150 grains of rice instead of the 200 that make for the perfect bite. This change makes the sushi feel more like what you'd find at a budget conveyor-belt sushi place, which is unfortunate since the quality of the fish is exceptional. We love trying out different Omakase experiences, and this one ranks among our favorites. The fish was incredibly fresh, and the sushi chef skillfully incorporated flavor enhancers like shiso, soy, and salt — they were perfectly balanced and not overwhelming. There was a great variety of fish, and the non-nigiri dishes complemented the meal nicely. Additionally, they offered some excellent sakes by the glass. Really amazing food, but some cons are: somewhat pricey $3-5 for a single piece) and long wait an hour or so). Definitely a wonderful treat for your tastebuds. Try to get a spot at the bar, it looks super interesting to be able to sit there in front of the chefs who are preparing the sushi. This is by far the best sushi I’ve ever had, and it stands out as one of the finest restaurants I’ve visited. The entire experience, from beginning to end, was truly exceptional. The omakase style, attentive service, and cozy atmosphere all contributed to a memorable dining experience. Each piece of nigiri felt like a taste of heaven. I’ve traveled to Japan, and honestly, the nigiri here surpassed what I experienced there. The preparation is incredibly meticulous, designed to highlight the best flavors in every bite. They are certainly doing something remarkable here, elevating the dining scene in Portland. You should definitely come here; you won’t regret it.

Really lovely and intimate atmosphere but the sushi selection was disappointing for the price tag. Our selection was extremely mackerel heavy. The best plate was amaebi, but they don't have a fryer so they didn't serve the heads. You could order uni at $14 for one piece !! but it wasn't part of the 11 piece menu. I ordered extra two pieces for 13 pieces total and walked out hungry. I am glad I tried it but don't plan to be back.

Far and away the best sushi I’ve had in Portland, and a strong contender for best sushi ever. We’re super fortunate to have this level of omakase available. The fish was exquisite, the staff knowledgeable and friendly and the ambiance sealed the deal. Will be back as frequently as I possibly can!Food: 5/5

Excellent Omakase at a very reasonable $90/pp. After moving to Oregon from Southern Ca, it’s been hard to find high quality sushi in Portland. The Nimblefish experience was great with high quality fish and a decent beverage selection. Reserva una mesa ahora

10/10. This is absolutely the best sushi I’ve had since my time in Tokyo. I've found my new favorite spot in Portland. Even the music selection was on point—with artists like Nas, Wu-Tang, Biggie, and more.
