The Sobo Ramen Pop-up operates exclusively from 9 p.m. to midnight on Fridays and Saturdays, using the space of their regular ramen restaurant. You can choose to sit at the counter or at a table, though there's no guarantee of seating if it's busy. The staff seamlessly shifts over from the main restaurant when they close. The pop-up menu is limited but covers most of the basic dishes and bowls. I found the ramen to be surprisingly good at this late hour, with more flavor than what you might expect from their regular offerings. I recently ordered the Glazed Pork Belly Ramen from Soba Ramen, hoping for a satisfying meal. Unfortunately, I have to give this place a one-star review. The Tonkotsu broth in the ramen was mediocre at best, lacking the depth of flavor I had expected. The glazed pork belly, a key component of the dish, was surprisingly flavorless, which was a major letdown. First time here for my ramen rush. I really didn't expect this place to be this elegant. I mean LOOK!!! The interior is just mind blowing and really eye catching gestures all around. Seemed like a nice place for friends and family gatherings. I've got their gyoza and some curry ramen topped with chicken katsu (sorry i forgot the full name of it). Gyoza was yummy and I'd give 5 stars for that and actually eat them again. The ramen broth was rich and delicious but i just couldn't eat the noodles (the noodles seemed more like a pasta noodles). It's a whole bunch and hard to chew. I mean, i know i was expecting the other one; soft and curly, lol. Though, the chicken katsu on top was just so fill...

Gave this place try after seeing the reviews and wanted to try a new place. Staff was quick and efficient and the ambience was great. Glad to see the place so busy even on a weeknight especially in Oakland Chinatown. I ordered the Spicy Black Tonkatsu ramen and to be honest it was ok. I quickly learn that the black garlic oil overpowered the broth and it just left this weird after taste. Considering it was one of their popular items I guess I expected more? Definitely not my type of ramen. I also split the karaage with my partner and again it was just very ok especially since the batter wasn't light and crispy like a traditional karaage texture. Amazing food. The best pork belly ramen I've ever had. The pork broth is rich in flavor with the right amount of smokey garlicky taste infused into the broth. The noodles are amazing as well, freshly made in the store. The amount of pork belly they serve you in the ramen is the most I've ever been given and by far the best too.The bacon wrapped quail eggs are amazing as well, with an explosion of flavor in your mouth with every bite and various depths of textures and flavors.Great service and amazing food. By far the best ramen place I've ever been to.

Very generous portion of sake by the glass! Loved the karaage (Japanese fried chicken . The noodle for the ramen is wrong but the pork belly and soup were above average. impressive ramen bowls, but I wish they'd bring back the option to make your own custom bowls. their inventive ramen bows are usually pretty spot on, but sometimes you just want a big bowl ofchicken, corn, noodles and spicy broth after a long night.Food: 4/5
