I stopped in here for a much desired dinner after a long day on the road. I was hoping to find something traditional, and found a matron who received me equally well in German and English. She was truly pleasant, and attentive. It was clear she ran the front end of the restaurant. I went with a regional Swabian dish, the maltauschen. Every restaurant does their own version of this Germanic ravioli, so you can never count on getting the same one twice. In this case, it was pork mixed in with cheese and herbs, stuffed inside the ravioli. The cheese dominated the flavor palate, while the herbs added some note of savoriness, but the pork was rather lost, overall. So while I have had better malta...
