We were forgotten after placing our order. Server never came back to check on us. We waited a long while after we finished our meals. I had to get up and walk up to the bar, where the manager, server and I guess the bartender was standing around chatting, meanwhile we were not acknowledged. There were other customers sitting around the bar that needed assistance while drinking and dining and they were having to hunt down an employee to assist. Restaurant staff needs to wake up and start taking care of their customers. It's not kind to ignore you're customers. We were there during restaurant week. For a Saturday night they were understaffed. They had one waitress, a manager and maybe a hostess serving meals for 60 people. The food was likely cooked in advance and held in a steam table, definitely not cooked to order. The brown gravy was utilized for the short ribs and the lamb and was overpowering in both instances. The gravy tasted like it was made from a powdered mix. The food was overpriced at $55 per person. The wine pairing offered was only 2 oz of wine per course. The service was poor. We went for Denver restaurant week and in my opinion, their menu wasn’t worth 55 a person. I started out with a salad that was actually okay, but really had no dressing on it. The fruit was fresh which was very nice. We also ordered drinks that were a little expensive, 15 a drink, and those were pretty okay. I also had the short ribs which were all fat, barely any meat, and a weird coffee sauce that ruined the taste of a braised short rib. The dessert was not very good either, it tasted and felt like it was in the fridge for at least overnight. Overall, I probably won’t be back.
They had reservation time slots but the place was nearly empty except for the family when the kid jumping up and down on a piece of furniture. Doors leading directly into the restaurant were locked, as if they didn't want people coming in. Then after walking through the hotel to get in, was informed that they weren't accepting card payments and I had to either have a room at the hotel or use the ATM. Was so glad I drove 30 minutes for this experience.

My steak was undercooked the first go-round. The waiter was quick to fire up a new one for me. It took a while for it to come but that's only because all food is made to order fresh. Once it came it was one of the most flavorful steaks I've ever had. This place is a must-try!
Borealis is a quaint restaurant with great food and great service. The cocktails were also delicious. It's a gem in the Hyatt Regency in Aurora, CO
