I've never experienced such wonderful flavor combinations. A very special treat and feast for the eyes and palates. Each course tasted amazing, and it was made all vegan for my husband and I. We didn't know what to eat, it was a surprise when every dish was taken out. My compliments to the cook and all employees in Saveur! I have never experienced such incredible flavor combinations before. Every course was delicious and vegan, specially prepared for my spouse and me. Each dish was a delightful surprise as it was brought out, making it a feast for both the eyes and the taste buds. My compliments to the chef and the entire team at Saveur! What truly impressed me more than the fantastic food was how the restaurant responded to my feedback after my initial visit for a 5-course meal. Definitely make a reservation here. This is too notch restaurant with an amazing chef and sommelier. We did the vegetarian and non vegetarian tasting menus. Both were excellent combinations of flavors. The chef mixes things up quite a bit and there were three new dishes tonight that he had not served before. They were all new to us. Dishes included peach soup, tenderloin, sockeye, and a lingonberry marshmallow for dessert. Each one expertly paired with a red or white wine. My husband and I enjoyed the chef's tasting menu with the wine pairing, it was absolutely fabulous. The smoked tomato vinaigrette was so flavorful in the first course. The meats were perfectly cooked and paired with the most delicious vegetables, especially the salmon with the black garlic brioche, such a beautifully complex flavor. Also, the grilled carrot with the duck, it sounds so simple but was so perfectly paired. The dessert was unique and amazing, a homemade loganberry marshmallow creation. Saveur's menu may look small but it packs powerful flavour! The chef's tasting menu made decision making simple for us two "foodies". We ate a relaxed meal where every element on the plate from appetizer to dessert was elevated from your standard dishes. Each dish had depth and many flavour layers, all while showcasing freshness and the delicious meat. Pork belly was our favourite and the marshmallow dessert... wow! We would go back in a heart beat. May do the wine pairing next time since we each ordered 3-4 drinks anyways. Staff were great and it was fun to watch the chefs at work too. If you want guaranteed good food, choose Saveur.
My wife and I ate at this small but well staffed restaurant during the height of the Victoria tourist season. Good thing we made reservations. Saveur is Victoria's top rated restaurant. It earned the ranking. The food was delicious. Portions were small, as expected; and prices were high, as expected. But the sauces and food combinations outweighed these drawbacks. Service was excellent as well. This restaurant truly deserves the label, "fine dining."
Fortunate to travel and dine in San Francisco at some pretty nice places so often feel spoiled. Unfortunately - makes the bar a bit higher and have to typically lower expectations for restaurants in Victoria. Saveur is the EXCEPTION. World class food, hip atmosphere, cool chef - just a great place all around. Been multiple times and is the only place I go if I really want a great dinner in Victoria.
