Rustic Reuben is a gem in Hamilton. It is located in a non-descript plaza on the ground floor. Warning paid parking is enforced, I think... (what is up with Hamilton and charging for parking everywhere)! I was serviced by a friendly lady and a gentleman who I assume to be the owner. The lady was helpful in explaining the menu and making suggestions. The owner was patient and engaging as he explained the differences between corn beef and brisket. In addition he explained the process of brining the proteins, marinating and smoking them. Needless to say, I want to try them all. I ended up ordering the O.G. or the Reuben (since it is in their store name). Reuben, if you do not know, is Marble Rye bread with house made corn beef, Saurkraut, Butter Pickles, House Made Russian Sauce, and Swiss Cheese. The ratio of the bread, to meat, to saurkraut and fixes are spot on. It is a well balanced sandwich. In taking a bite, I get the saltiness from the corn beef, the acid from the saurkraut and pickles which cuts through the saltiness of the beef, creamy dressing, crunch of the pickles and at times the flavour of the swiss cheese permeates through. It`s an explosion of flavour in every bite and contrast of textures. If I am ever back in Hamilton, I will be trying other proteins.
